I forgot when last time I did my favorite prosciutto. I miss it.
When I was in Traders Joe I bought two slim pieces of turkey breast and when got home cover it with salt for 24 hours
Then soaked in cold water, cover it with paper towels and let it dry under weight. After it’s shaped I rubbed with spices, – the secret spices 🤷🏻♀️ and hanged to air dry for 3-4 days
