My new obsession is cured and dry meat. It’s so intriguing. Chicken is easy to do, and will be ready to try in 4 days, but beef is more complex to make and need more attention, going to be ready in 10-11 days.
I’m all in! I read all recipes and choose the one I like. I did chicken once and it was delicious! Wanted to post all stages of how-to but it’s so gross looking, so best to see finished result.
Now I think I will try duck breast too, with herbs as my friend suggested!
